Vermont Hiking Guide

Is random off-trail overnight camps permitted on the northeast section of the Appalachian Trail??
My friends and I will be hiking on the AT from Mass. into lower Vermont for about 7 days.
Few Questions-
1- Outside of the clearly stated "no camping" zones, and reservations, are we allow to just make a small no-impact camp anywhere 500 ft off the trail? or does it have to be at a designated campground/shelter site.
2- Are we going to need a permit? (Backcountry/camping permit)
3- I bought a highly rated guide of the section we will be hiking and it has small section maps (like 1 inch = 1 mile, 5 inch wide maps in the middle of each section). We're pretty sure it'll be enough to keep us going along the trail, since we will be sticking to the AT only. Is that going to be enough? AKA, is the trail THAT well marked? or should we also pick up the USGS area maps of the AT where we will be hiking.

I often hike in the Shenandoah section of the AT - but have never been to the Mass to Vermont sections. Down here - off trail camping is common. no-impact, no-trace camping is strongly required, but I do it all the time. Hike until the sun goes down and find a flat spot to pitch a tent and start a fire.
The trail down here is bomber. It's hard to loose course - so if you are staying on the AT and have some type of map - you should be good to go.
But - someone with your area experience may have better details...VA is far away.
